A Sink full of Sweet Potatoes

201301412 009When Brad was watering the vege beds, he noticed a large sweet potato sticking out of the ground. I hadn’t paid much attention to the vine since we planted it a year ago, though I had noticed the vines were spreading and the leaves were looking healthy. I had to use the garden fork to dig out the main tuber which was over 25 cm long and looked like a horses heart! There was a whole bunch sitting beside it, so I dug out all I could find. Sweet potato mash with blue cheese for tea I think. The plant is supposed to be a perennial, so I hope it survives me digging out its roots.
